  • The atmospheric steam canning method also underwent a significant transformation. Until recently, it was not USDA-approved or scientifically endorsed. However, in 2020, the University of Wisconsin-Madison Division of Extension conducted research that resulted in the endorsement of steam canning as a safe method. Shortly afterward, the University of California Agriculture and Natural Resources added this guide to atmospheric steam canning.  Despite this scientific research, atmospheric steam canning is not currently on the list of the USDA-recognized canning methods. However, this method has steadily gained popularity among canning enthusiasts because it is a much more environmentally friendly and nimbler home canning method than any of the two USDA-approved canning methods.
