Modern Day and Traditional Canning Methods

It’s crucial to understand that the world of canning is dynamic and subject to ongoing scientific debates and advancements.

  • For instance, in 1980s the inverted canning method, also known as open kettle canning, was widely endorsed by the scientists and experts. However, as time passed, the same experts and scientists withdrew their endorsement of this method.
  • The atmospheric steam canning method also underwent a significant transformation. Until recently, it was not USDA-approved or scientifically endorsed. However, in 2020, the University of Wisconsin-Madison Division of Extension conducted research that resulted in the endorsement of steam canning as a safe method. You can read more about this update here: University of Wisconsin-Madison Division of Extension Research. Shortly afterward, the University of California Agriculture and Natural Resources added this guide to atmospheric steam canning.  Despite this scientific research, atmospheric steam canning is not currently on the list of the USDA-recognized canning methods. However, this method has steadily gained popularity among canning enthusiasts because it is a much more environmentally friendly and nimbler home canning method than any of the two USDA-approved canning methods.

If you are in the market for a reliable atmospheric steam canner, VKP brands is one the most popular atmospheric steam canner in use today.
