Ingredients
2lbswild red huckleberries -900 g - picked over and rinsed
2cupswater -500 ml - approximately 1 cup per pound of berries
1/3cupgranulated sugar -67 g - for mashing the berries
3/4cupgranulated sugar per cup of strained juice - up to 1 cup -150-200 g per 240 ml juice - measured after straining juice
1tbspregular powdered pectin -10 g - mixed thoroughly with the measured sugar added to the strained juice
Instructions
Make the Huckleberry Juice
Place the washed red huckleberries in a large saucepan.
Sprinkle ⅓ cup granulated sugar over the berries.
Lightly mash the berries with a potato masher until most are broken.
Let the berries macerate for at least 3 hours or overnight.
Add water, bring to a gentle simmer and cook for about 5 minutes.
Remove from the heat, cover, and leave to steep overnight.
Strain the Juice
Pour the mixture through a fine-mesh metal strainer set over a large bowl, optionally lining with a double layer of cheesecloth for higher clarity.
Let the juice drain naturally without pressing or squeezing the berries.
Measure the final strained juice to determine the required sugar amount.
Make the Jelly
Measure ¾ to 1 cup of sugar for every cup of strained juice and whisk the pectin thoroughly into this measured sugar.
Pour the strained juice into a clean saucepan and bring it to a full rolling boil.
Stir in the sugar and pectin mixture all at once, stirring constantly until fully dissolved.
Return the jelly to a full rolling boil and cook for about 12 to 15 minutes until it reaches setting point.
Ladle the hot jelly into prepared jars, leaving ¼-inch headspace.
Remove any air bubbles, wipe the rims clean, apply lids, and tighten bands fingertip-tight before processing.
